Slow cooker monk fish feijoada

This takes a while to cook but there isn't all that much work involved. Its a great leave to cook for dinner while you do other things dish. It is reminiscent of the portuguese feijoada which is a meat feast.  Monk fish is used instead to give the dish a bit of a twist. The following quantities serves two adults and a toddler.

Soak 250 g of red kidney beans in water overnight. In the morning add one finely chopped clove of garlic, two shallots, three celery stalks, two carrots, 50 g of chorizo, half a head of white cabbage, and two handfuls of cherry tomatoes to the drained kidney beans in the slow cooker. Cover with half a bottle of red wine and enough chicken stock to cover the vegetable mixture. Add two bay leaves and cook on low heat for at least 8 hours. Add 500 g of monk fish that has been cut into bite size pieces and cook on high heat for 1 hour. Season with salt and pepper to taste. Serve with rice, chopped coriander, and a drizzle of olive oil.
